Easy Radish & Beetroot Pink Pickle

Riverford is always my go to site for pickling inspiration. For this pickle recipe I added in some Chiogga beetroot for added crunch and a punch of natural pink colouring along with some fennel and corainder seeds. As well as pickling and crunching them raw, I do love a roasted radish and BBC GOOD FOOD have some great recipes here.
