Easter Shortbread Recipe Ideas - DIY Guide

There’s always so much fun to have with the humble shortbread recipe. Here are some fun Easter bakes that would look great in our DIY paper bunny bags.

Ingredients -

  • 125g/4oz unsalted butter, softened
  • 55g/2oz caster sugar, plus extra to finish
  • 180g/6oz plain flour

Combine all the ingredients to form a dough. Heat oven 190c/170c Fan/Gas. Bake for 15-20 minutes, keep an eye on them as you don't want them to brown.

Once cooled all these biscuits can be iced and decorated, dipped in chocolate or left plain (the way I like them!).If you are popping them in the DIY Bunny Bags leave to cool first and wrap in a small piece of parchment paper.

Bunny Biscuits -

Roll out the dough approx 1cm thick and cut out the bunnys. Add the face details with the round end of a chop stick for the eyes and the end of a teaspoon for the mouth. Chill in the fridge for 15mins before baking.

Spotty Egg Biscuits -

Make a batch of the above dough. Use ¼ of the dough to make a selection of coloured dough for the spots, use food colour gel and remember you don’t need much!

Roll the plain dough to 1cm thick. Cut out the circles using a different sizes if you have the cutters, and fill with the same size circle cut from the colour dough. Once you have completed the spotty dough very gently roil it and pop in the fridge to chill for about 15 minutes. Remove from the fridge and cut out the egg shapes and bake!

Marble Egg Biscuits -

Keep the excess dough from the spotty biscuit dough and gently roll it back into a ball, you don’t want to overwork it as you will loose the marble pattern. Roll it out 1cm thick and cut out the shapes, chill in the fridge for 15 minutes, then bake!!

I bought the shape cutters from Cutting About
